Green Tomato Crisps - cooking recipe

Ingredients
    7 lb. small firm green tomatoes
    2 gal. lime water (3 c. hydrated lime to 2 gal. of water)
    4 lb. sugar
    3 pt. vinegar
    1 tsp. cloves
    1 tsp. ginger
    1 tsp. celery seed
    1 tsp. mace
    1 tsp. cinnamon
Preparation
    Slice tomatoes 3/16-inch thick. Soak in lime water for 24 hours. Drain and soak for 4 hours in clear water. Change water every hour. In draining and changing the water, extreme care must be exercised to keep from breaking as they are very brittle. I suggest letting the water run gently from the faucet on each piece to get rid of the lime. This takes time, but the pickles are nicer.
