Eggplant Caviar - cooking recipe

Ingredients
    1 to 2 eggplants
    1 Tbsp. olive oil
    salt and pepper to taste
    1 onion, chopped fine
    1/2 Tbsp. vinegar
Preparation
    Bake or boil eggplants and cool them.
    When cold, scoop out the centers and the chopped onion, the oil and vinegar.
    Salt and pepper.
