No Bake Honey Crispers - cooking recipe

Ingredients
    1 c. coconut
    1/2 c. powdered sugar
    1/2 c. peanut butter
    1/2 c. honey
    1 1/2 c. crispy rice cereal
    1/2 c. raisins (optional)
Preparation
    Place a sheet of waxed paper on a baking pan that will fit inside your refrigerator.
    Measure coconut and place in pie pan; set aside.
    Measure powdered sugar, peanut butter and honey and place in medium bowl.
    Use a rubber spatula to get peanut butter and honey out of the measuring cups.
    Stir with wooden spoon until well mixed.
    Add cereal and raisins.
    Stir well.
    By hand, roll pieces of mixture into 1-inch balls.
    Roll balls in coconut and place on waxed paper in baking pan.
    Refrigerate for 1 hour.
    Check to test firmness.
    If not firm, wait for 15 to 20 minutes more.
