Ingredients

1/2 c. flour
1/2 c. quick cooking oats
3/4 c. buttermilk
1/4 c. milk
1 Tbsp. sugar
1 egg
2 Tbsp. vegetable oil
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
Preparation

Beat all ingredients with hand mixer until smooth.
(For thinner pancakes, stir in 2 to 4 tablespoons additional milk.) Grease heated griddle with shortening.
(Pastry brush can be used for this.)
To check if griddle or pan is hot enough, sprinkle few drops of water.
If it bubbles and skittles around, it's ready. Use 1/4 cup batter for each pancake.
Cook until golden on both sides.
Makes 10 to 12.
