Rice Pudding - cooking recipe

Ingredients
    2/3 c. rice, cooked with 1/2 c. raisins (if desired)
    1 1/4 c. sugar
    1/4 tsp. salt
    3 Tbsp. sifted flour
    2 c. milk
    3 egg yolks, slightly beaten
    1 tsp. vanilla
    3 egg whites
    1/2 tsp. cream of tartar
    6 Tbsp. sugar
    1/4 tsp. vanilla
Preparation
    In top of double boiler, combine sugar, salt and flour. Mix well. Gradually add milk. Mix well. Place over rapidly boiling water, stirring until mixture coats spoon. Pour a little of the hot mixture into beaten egg yolks, beating constantly. Add egg yolks to hot mixture in double boiler. Stir in rice and raisins; cook 2 minutes. Add vanilla. Put into baking dish.
