Baked Fish Cordon Blue - cooking recipe
Ingredients

2 lb. flounder or other fish fillets, skinned (fresh or frozen)
6 slices cooked ham or turkey ham (6 oz.)
6 slices Swiss cheese (6 oz.)
1 tsp. grated orange rind
1/4 tsp. white pepper
1 egg, beaten
1 c. bread crumbs
1 Tbsp. butter or margarine
1 Tbsp. flour
1 c. light cream or half and half
1/4 c. Parmesan cheese
Preparation

Thaw fillets if frozen.
Place 1 slice each of ham and cheese in center of each fillet.
Cut to fit.
Sprinkle with grated orange rind and white pepper.
Roll into pinwheels and secure with toothpicks.
Gently dip roll in beaten egg; coat with bread crumbs.
Place in a greased 12 x 8 x 2-inch baking dish.
