Indonesian Pork Chops - cooking recipe

6 large loin chops
1/2 tsp. salt
1/2 tsp. pepper
1 large can peaches
1 Tbsp. cider vinegar
1 Tbsp. brown sugar
1 Tbsp. soy sauce
1 Tbsp. onions, minced
1/2 tsp. ginger
1/8 tsp. garlic
1 large green pepper, cut in large pieces
1 large pimiento (optional)
Preparation

Trim chops.
Rub heated skillet with fat.
Season chops with salt and pepper. brown.
Drain all but 2 tablespoons of fat. Combine peach juice, vinegar, brown sugar and seasonings.
Pour over chops.
Simmer covered for 30 minutes.
Add peaches, peppers and pimiento.
Simmer covered five minutes longer.
Serve over rice.
