Bean And Leek Soup - cooking recipe

Ingredients
    1 c. pea beans, soaked overnight and drained (1/2 lb.)
    1 Tbsp. oil
    1/4 lb. bacon, diced
    4 carrots, diced
    5 to 6 medium leeks, diced
    bouquet garni
    1 clove garlic, crushed
    salt and pepper
    8 c. stock
    1 small head green cabbage, shredded
Preparation
    Simmer the beans, covered in half the stock, for 2 hours.
    If all stock is absorbed during cooking, add water so the pan is moist.
