Lentil Soup - cooking recipe

Ingredients
    bones from baked ham
    2 1/2 qt. cold water
    2 Tbsp. salt
    1 small clove garlic
    8 to 10 peppercorns
    1 medium onion, sliced
    1 c. celery leaves
    1 bay leaf
    4 sprigs parsley
    1 1/2 c. quick cook lentils
    2 c. diced carrots
    1/8 tsp. pepper
Preparation
    Place bones in a large kettle. Cover with water.
    Add salt. Tie garlic, peppercorns, onion, celery leaves, bay leaf and parsley in cheesecloth bag. Skim fat from broth.
    Add lentils. Cover and cook over medium heat for 30 minutes. Add diced carrots and pepper.
    Continue cooking for 30 minutes or until carrots and lentils are tender.
    Yields 6 servings.
