Vegetable Sandwiches - cooking recipe

Ingredients
    2 medium tomatoes
    2 medium cucumbers, split and remove seeds
    1 medium bell pepper
    1 c. celery
    1 large onion
    1 Tbsp. unflavored gelatin
    1/4 c. water
    1 tsp. salt
    2 c. mayonnaise
Preparation
    Cube first five ingredients very fine (may use a food processor but do tomatoes by hand).
    Dissolve gelatin in 1/4 cup warm water and then add the salt and mayonnaise.
    Combine with vegetables and stir until well blended.
    Refrigerate overnight.
    Mixture gels like jello.
    Makes approximately 100 finger sandwiches.
    Best to make just before you serve.
