Plantation Salad - cooking recipe

Ingredients
    1 lb. can artichoke hearts, drained
    1/3 c. olive oil
    1/3 c. fresh squeezed lemon juice
    1 head romaine
    2 Tbsp. crushed dried mint
    salt to taste
    4 green onions, chopped
    1 c. pitted Greek black olives
    2 ripe tomatoes, peeled and cut in wedges
Preparation
    Marinate artichoke hearts for 2 to 3 hours in olive oil and lemon
    juice.
    Tear
    lettuce
    into\tbite-size
    pieces and combine with
    remaining
    ingredients in large salad bowl; add artichoke hearts with their marinade and toss lightly.
