Shrimp And Feta - cooking recipe

Ingredients
    1/4 c. butter or oil
    1 lb. medium shrimp, peeled and deveined
    2 lb. plum tomatoes, diced
    16 oz. Feta cheese, crumbled
    8 oz. pitted Kalamata olives (or other Greek variety)
Preparation
    Heat butter or oil on medium heat in large, heavy skillet. Saute shrimp approximately 1 to 2 minutes on each side until opaque.
    Transfer cooked shrimp with slotted spoon to warm plate and cover, set to side.
    Saute tomatoes until tender on medium-low heat, approximately 8 minutes.
    Add olives and saute for 2 minutes.
    Add 1/2 crumbled Feta and melt.
    Add shrimp and saute until warmed approximately 2 minutes.
    Add reserved Feta to mixture, do not allow to melt completely.
    Serve as appetizer with chunk of crusty bread or over angel hair pasta as an entree.
