Shrimp Mini Pizzas - cooking recipe

Ingredients
    2 pkg. active dry yeast
    2 c. warm water (105~ to 115~)
    1/4 c. vegetable oil
    2 tsp. sugar
    2 tsp. salt
    4 1/2 to 5 1/4 c. all-purpose flour
    1 (15 oz.) can tomato sauce
    1 1/2 tsp. Italian seasoning
    3 (4 1/2 oz. each) cans small shrimp, drained
    1 medium onion, chopped (about 1/2 c.)
    3/4 c. sliced ripe olives
    1/2 large green pepper, chopped
    1 1/2 c. shredded Mozzarella cheese (about 6 oz.)
    2/3 c. Parmesan cheese
Preparation
    Dissolve yeast in warm water in a large bowl; stir in oil, sugar, salt and 4 cups of the flour.
    Beat until smooth.
    Turn dough onto floured surface.
    Knead in enough remaining flour to make dough easy to handle.
    Knead until smooth, 3 to 5 minutes. Place in greased bowl; turn greased side up.
    Cover.
    Let rise in warm place until doubled, about 45 minutes.
