Oven-Fried Chicken - cooking recipe

Ingredients
    1 c. mashed potato flakes
    1/4 tsp. pepper
    1/4 to 1/2 tsp. poultry seasoning
    2 egg whites, slightly beaten
    1 tsp. lemon juice
    1 (2 1/2 to 3 lb.) frying chicken, cut up and skinless
Preparation
    Heat oven to 375\u00b0.
    In plastic bag, combine potato flakes, pepper and poultry seasoning. In shallow bowl combine egg whites and lemon juice.
    Dip chicken, a few pieces at a time, in egg mixture.
    Shake chicken in potato flake mixture to coat.
    Place chicken in ungreased 15 x 10 x 1-inch baking pan.
    Bake uncovered at 375\u00b0 for 45 to 60 minutes or until chicken is fork-tender and juices run clear.
    Makes 4 to 5 servings.
