Fettucine Carbonara - cooking recipe
Ingredients

1 Tbsp. unsalted butter
4 large shallots, minced or 4 scallions
6 strips bacon, sliced crosswise into julienne strips
1 lb. fettucine noodles
1/4 c. heavy cream
1/2 tsp. salt
1 tsp. olive oil
3 egg yolks, room temperature
1/2 c. fresh grated Parmesan cheese
1/2 tsp. white pepper
fresh grated Parmesan cheese (garnish)
fresh grated white pepper (garnish)
Preparation

In saucepan, heat butter and oil together.
Saute shallots over medium heat until soft, about 5 minutes.
Add bacon and continue to cook over medium heat for an additional 10 minutes or until bacon begins to brown; set aside.
