Jean'S Enchiladas - cooking recipe
Ingredients

2 Tbsp. butter
1 lb. ground round
1 c. chopped onion
1 c. chopped green pepper
2 Tbsp. butter
4 Tbsp. flour
4 tsp. chili powder
2 cloves garlic, minced, or garlic powder
1 (15 oz.) can tomato sauce
1 can consomme
1/2 c. water (if needed)
Preparation

Brown beef in 2 tablespoons butter.
Saute onion and green pepper in 2 tablespoons butter and add to beef.
To this mixture add flour, chili powder and garlic. Mix.
Lastly, add the tomato sauce and undiluted consomme.
Simmer over low heat, stirring often.
If the mixture appears too thick, add the remaining 1/2 cup water.
Serve hot meat sauce over tortillas.
Serves 12.
