Weight Watcher Gazpacho Cooler - cooking recipe

Ingredients
    1 c. mixed vegetable juice or tomato juice
    1 medium cucumber
    1 c. chopped green pepper
    1/4 c. chopped onion
    3 Tbsp. freshly squeezed lime or lemon juice
    2 tsp. red wine vinegar
    1 garlic clove
    1 to 2 drops hot sauce
    1/2 c. seltzer
Preparation
    Pour vegetable juice into an ice cube tray, making 10 cubes. Freeze until solid.
    Cut 2 slices from cucumber and reserve for garnish.
    Pare and seed remaining cucumber, then cut into pieces. In blender, combine cucumber, pepper, onion, lime juice, vinegar, garlic and hot sauce.
    Process on medium speed until smooth.
    Stir in seltzer.
