Mexican Chicken And Rice - cooking recipe

Ingredients
    1 Tbsp. oil
    1 lb. diced chicken
    1 onion, minced
    1 pepper, minced
    1 (10 oz.) pkg. frozen corn
    1 c. chicken broth
    1 c. mild salsa
    1 1/2 c. instant rice
    1 1/2 c. shredded cheese
Preparation
    Saute onion and pepper in oil.
    Add chicken, corn, broth and salsa.
    Bring to a boil.
    Stir in rice and cover.
    Remove from heat and let stand 5 minutes.
    Fluff with a fork.
    Sprinkle with cheese and let stand for 2 minutes.
    Put in flat dish to melt cheese in 350\u00b0 oven.
