Holiday Sweet Potatoes - cooking recipe
Ingredients

4 lb. sweet potatoes
1/2 c. margarine, softened
1/3 c. bourbon
1/2 c. orange juice
1/4 c. brown sugar, packed
1 tsp. salt
1/4 tsp. cinnamon
1/8 tsp. nutmeg
1/3 c. chopped pecans or walnuts
Preparation

Scrub potatoes.
Cook, covered, in boiling water just until tender, about 35 minutes.
Drain, peel and place in a large bowl. While potatoes are still warm, mash with an electric mixer.
Add butter, bourbon, orange juice, brown sugar, salt, cinnamon and nutmeg.
Beat until smooth and fluffy.
Turn mixture into a greased 2-quart casserole.
(May be made ahead up to this point.
Cover and chill until ready to bake.)
Sprinkle nuts around the edge to make a border.
Bake at 350\u00b0 for 45 minutes until lightly browned. Makes 8 servings.
