Zucchini And Rice Boats - cooking recipe
Ingredients

6 medium zucchini
3 Tbsp. margarine
1 c. soft white bread crumbs (2 slices)
1 medium red onion, chopped
1 clove garlic, minced
1 (6 oz.) pkg. white and wild rice mix
butter or margarine
1 egg
1 tsp. salt
1 c. cubed Cheddar cheese (4 oz.)
Preparation

Cut a thin slice lengthwise from zucchini; hollow out using a grapefruit knife.
Chop zucchini meat.
Parboil zucchini shells about 5 minutes; drain on paper towels.
