Fluffy Potato Doughnuts - cooking recipe

Ingredients
    3 eggs
    1 1/3 c. sugar
    1/2 tsp. vanilla
    1 c. cooled, mashed potatoes
    2 Tbsp. melted shortening or oil
    4 c. flour
    6 tsp. baking powder
    2 tsp. nutmeg
    1 tsp. salt
    1/2 c. milk
Preparation
    Beat until light eggs, sugar and vanilla.
    Add potatoes and shortening; set aside.
    Sift dry ingredients together, then add alternately with milk to potato mixture, beating well.
    Chill dough 3 hours (if desired).
    Roll to 3/8-inch thickness.
