Tomato Rice Pilaf - cooking recipe

Ingredients
    3 oz. butter
    1 lb. rice
    1 tsp. salt
    1 oz. onions, chopped
    1 qt. chicken stock (hot)
Preparation
    Melt butter in saucepan.
    Add onions; saute until transparent. Add rice; saute about 5 minutes, stirring often.
    Add hot chicken stock, tomatoes and salt.
    Cover tightly; bake at 350\u00b0 for 18 to 20 minutes, or until all liquid is absorbed and rice is dry and fluffy.
    (May be served in scooped out tomatoes.)
