Apricot Loaf - cooking recipe

Ingredients
    1 c. dried apricots
    2 c. flour
    2 tsp. baking powder
    1 tsp. salt
    1/4 tsp. baking soda
    1/4 c. shortening
    1 c. sugar
    1 egg, well beaten
    1/4 c. water
    1/2 c. orange juice
    1/2 c. walnuts
Preparation
    Soak dried apricots in warm water for 15 minutes.
    Drain water and cut apricots into pieces.
    Set aside.
    Cream in shortening and sugar together.
    Add eggs; blend well.
    Add sifted flour, baking powder, baking soda and salt alternately with water and orange juice.
    Fold in apricots and nuts.
    Pour batter in greased 9 x 5 x 3-inch loaf pan.
    Push batter into corners of pan, leaving center slightly hollow.
    Let stand for 20 minutes before baking.
    Bake at 375\u00b0 for 60 to 65 minutes.
