Scallop And Vegetable Cheese Casserole - cooking recipe

Ingredients
    1 tsp. basil
    1/4 c. vegetable oil
    1 large onion, chopped
    1 garlic clove, chopped
    1 c. whole grain bread crumbs
    1/4 c. Parmesan cheese, grated
    1/3 c. parsley, chopped
    2 c. Mozzarella cheese, shredded
    10 oz. zucchini, cubed
    10 oz. carrots, sliced
    10 oz. spinach, shredded
    1 lb. scallops, washed and drained
    salt and pepper to taste
Preparation
    In a large skillet heat 2 teaspoons oil.
    Add onions and garlic; saute for 2 minutes.
    Add bread crumbs and cook until lightly browned.
    Remove from heat; add 3 tablespoons Parmesan cheese and parsley.
    Spread evenly over bottom of ovenproof baking dish.
    Layer half of Mozzarella cheese on top.
    Then add layer each of zucchini, carrots, spinach and scallops.
    Sprinkle with basil, salt and pepper.
    Layer remaining Mozzarella cheese, Parmesan cheese and parsley.
    Brush remaining oil over top.
    Cover with foil.
    Bake 20 minutes at 350\u00b0.
    Remove foil and continue to bake 25 to 30 minutes.
