Mexican Rice(Serves 4) - cooking recipe

Ingredients
    1 large tomato, chopped
    1/4 c. chives, chopped
    1/2 c. onion, chopped
    1 large clove garlic, pressed
    1 3/4 c. chicken broth
    1/4 tsp. cumin (optional)
    1/4 tsp. pepper
    1 c. uncooked long grain rice
    2 Tbsp. olive oil
Preparation
    Bring chicken broth to boil.
    Saute onion and garlic in olive oil for 2 minutes.
    Add rice; saute for 2 minutes.
    Add boiling chicken broth, cumin and pepper.
    Cover and simmer for 10 minutes. Add tomato and chives; simmer for 5 minutes.
    Remove from heat; stir and set aside (covered) for 10 minutes before serving.
