Cream Of Potato Soup - cooking recipe

Ingredients
    4 Tbsp. margarine
    2 Tbsp. minced garlic
    1/2 c. finely chopped celery
    2 green onions, chopped
    1 small sweet onion, chopped
    6 medium potatoes, peeled and chopped
    4 oz. fresh mushrooms
    2 carrots, chopped fine
    1 1/2 c. chicken broth
    2 c. water
    3/4 tsp. salt
    1/2 pt. half and half
Preparation
    Use a heavy pot.
    Saute garlic, celery, green onions and sweet onion in butter.
    Add chopped potatoes, mushrooms and carrots; cook 3 minutes.
    Add chicken broth, water, salt and pepper.
    Bring to a boil and reduce heat.
    Simmer, covered, 20 minutes.
    Whisk in 1/2 pint of half and half.
    Serve hot with a little grated sharp Cheddar cheese and chopped green onion sprinkled on top.
