Candied Yam Boats - Sweet Potatoes - cooking recipe

Ingredients
    4 small yams or sweet potatoes
    1/2 c. prepared mincemeat
    3 Tbsp. butter or margarine
    1 Tbsp. lemon juice
    1/2 tsp. salt
    1/4 c. chopped pecans
Preparation
    Scrub potatoes with a brush.
    Bake at 325\u00b0 until tender, about 1 hour.
    Remove the potatoes from oven. Cut in half lengthwise. Scoop out center of halves, leaving about 1/2-inch shell.
    Set shells aside.
