Microwave Peanut Brittle - cooking recipe
Ingredients

1 1/2 c. raw peanuts (skins on)
1 c. sugar
1/2 c. white corn syrup
1/8 tsp. salt
1 tsp. butter
1 tsp. vanilla
1 tsp. baking soda
Preparation

In a 1 1/2-quart container suitable for microwave oven, stir together peanuts, sugar, syrup and salt.
Microwave on High for 4 minutes.
Remove from oven and stir.
Return to oven and microwave on High for 4 more minutes.
Remove from oven; stir in butter and vanilla.
Return to oven and microwave on High 2 more minutes. Remove from oven and quickly stir in baking soda (mixture will be light and foamy) and pour onto a lightly greased baking sheet or marble slab, spreading thin.
When cool, break into small pieces. Store in airtight container.
Makes 1 pound.
