Currant Muffins - cooking recipe

Ingredients
    2 c. sifted flour
    1/4 c. sugar
    1 Tbsp. baking powder
    1 tsp. salt
    1/4 tsp. ground ginger
    1 egg, beaten
    1 c. milk
    1/2 c. melted shortening
    1 c. currants
Preparation
    Sift together the flour, sugar, baking powder, salt and ginger.
    Combine egg, milk and shortening; add to dry ingredients. Stir until all flour is moistened.
    Fold in currants.
    Spoon into greased muffin pans, filling cups 2/3 full.
    Sprinkle with topping.
    Bake at 425\u00b0 for 20 minutes.
    Yields 18 muffins.
