Harvest Cake - cooking recipe

Ingredients

4 c. chopped apples
2 c. sugar
3 c. flour
2 tsp. soda
1 tsp. salt or less
1 c. oil
2 eggs
1 tsp. vanilla
1 tsp. almond (optional)
1 c. nuts
raisins (if preferred)
1 tsp. nutmeg
1 tsp. cinnamon

Preparation

Let apples and sugar stand, mixed, for 1 hour.
Add remaining ingredients to same bowl.
Mix all ingredients until well blended. Bake in tube pan (ungreased) for approximately 1 hour and 15 minutes at 325\u00b0 or until toothpick, when inserted, comes out clean.
Serve plain or with whipped cream or Cool Whip.
