Franke'S Eggplant Casserole - cooking recipe

Ingredients
    1 medium eggplant
    1/2 stick oleo
    1 medium chopped onion
    2 eggs
    1 can drained tomatoes
    1 c. grated cheese
    1/2 c. cracker crumbs
    1/2 c. bread crumbs
Preparation
    Peel and cut eggplant in small cubes.
    Cook in salted water about 15 minutes.
    Drain and mash; set aside.
