Yam Roll - cooking recipe

Ingredients
    3/4 c. flour
    1 tsp. baking powder
    4 eggs
    1 c. sugar
    1 c. yams, mashed
    1 tsp. lemon juice
    4 tsp. apple pie spice
    1/2 tsp. salt
    1/2 c. chopped nuts
Preparation
    Beat eggs 5 minutes with electric mixer.
    (This is an important step.)
    Add all other ingredients.
    Mix well.
    Pour into a 1 x 10 x 15-inch jelly roll pan that has been well-greased and floured. Sprinkle with 1/2 cup chopped nuts.
    Bake at 375\u00b0 for 10 minutes or until done.
    When done, turn out on a tea towel that has been sprinkled with powdered sugar.
    Roll up like jelly roll.
    Cool. When cool, unroll and fill.
