Orange-Candied Sweet Potatoes - cooking recipe

Ingredients
    6 medium sweet potatoes
    2 Tbsp. margarine
    2 c. orange marmalade
    2 Tbsp. orange juice
    1 Tbsp. lemon juice
    1/8 tsp. salt
    1 Tbsp. flaked coconut, toasted
Preparation
    Scrub potatoes.
    Cook in water to cover in saucepan for 25 to 30 minutes or until tender; drain.
    Cool.
    Peel potatoes; cut lengthwise into 1/2-inch slices.
    Melt margarine in large skillet. Stir in marmalade, orange juice, lemon juice and salt.
    Bring to a boil.
    Add potatoes.
    Cook over medium heat for 15 minutes, turning potatoes occasionally.
    Spoon onto serving dish; sprinkle with coconut.
    Yield:
    8 servings.
