Spiced Eggplant - cooking recipe

1 large eggplant
2 Tbsp. olive oil
1 c. onion, peeled and finely chopped
1 c. green pepper, finely chopped
2 cloves garlic, minced
2 c. Italian plum tomatoes, finely chopped
4 Tbsp. red wine vinegar
1 Tbsp. fresh basil, finely chopped
1/4 tsp. cayenne pepper
1/8 tsp. Tabasco
1 1/2 Tbsp. capers, drained
1 tsp. salt
Preparation

Preheat oven to 350\u00b0.
Cut the eggplant in half and place it on an oiled baking sheet, cut side down.
Bake 30 to 40 minutes, or until soft.
Let cool.
