Coconut Cream Pies - cooking recipe
Ingredients

1/2 c. sugar
1/3 c. flour
1/2 tsp. salt
3 c. milk
3 egg yolks, beaten
1 c. coconut
1 tsp. vanilla extract
2 (9-inch) graham cracker pie shells
3 egg whites
6 Tbsp. sugar
1/2 c. coconut
Preparation

Combine 1/2 cup sugar, flour and salt in saucepan.
Add milk and egg yolks; mix well.
Cook over medium heat until thickened, stirring constantly.
Remove from heat.
Stir in 1 cup coconut and vanilla.
Spoon into pie shells.
Beat egg whites in mixer bowl until soft peaks form.
Add remaining 6 tablespoons sugar, 2 tablespoons at a time, beating until stiff peaks form.
Spread over fillings, sealing to edges.
Sprinkle pies with remaining 1/2 cup coconut.
Bake at 350\u00b0 for 15 minutes or until lightly browned.
Yield:
12 servings.
