Onion Shortcake - cooking recipe

Ingredients
    1 large Spanish onion
    1/4 c. butter
    1 1/2 corn muffin mix (Jiffy)
    1 egg, beaten
    1/3 c. milk
    1 c. cream-style corn
    1 c. sour cream
    1/4 tsp. salt
    1 c. shredded sharp Cheddar cheese
Preparation
    Slice onion into rings and cook slowly in butter until transparent.
    Combine corn mix, egg, milk and corn.
    Pour into buttered 8-inch square pan.
    Add sour cream, salt and 1/2 the cheese to onion.
    Mix well and spread evenly over corn batter. Sprinkle with remaining cheese.
    Bake at 425\u00b0 for 30 minutes. Serve hot.
