Ingredients

2 lb. stew meat, cut into 1 1/2-inch cubes
2 medium onions, cut into eighths
3 stalks celery, cut in large pieces
4 carrots, quartered
1 c. tomato juice
1/3 c. quick-cooking tapioca
1 Tbsp. sugar
1 Tbsp. salt
1/4 tsp. salt
2 medium potatoes, sliced 1/4-inch thick
Preparation

Combine beef, onion, celery and carrots in a 2 1/2-quart casserole.
(I use my crock-pot.)
Combine tomato juice, tapioca, sugar, salt and pepper.
Pour over meat and vegetables.
Cover and bake in preheated oven (300\u00b0) about 2 1/2 hours.
Add potatoes and cook 1 hour longer.
Stir occasionally.
(I put in crock-pot about noon and it's ready around 5 or 6 p.m.)
