Mexican Pie - cooking recipe
Ingredients

2 c. beef broth
1 c. long grain rice
1 Tbsp. butter
1 tsp. salt
2 eggs
2 Tbsp. chopped pimiento
Preparation

Grease a 10-inch pie plate.
In medium saucepan, heat broth to boiling.
Stir in rice, butter and salt.
Return to boil.
Cover, reduce heat and simmer according to package instructions.
Remove from heat; let cool slightly.
Stir in eggs and pimiento.
Press against sides and bottom of pie plate.
