Calico Bean Soup - cooking recipe

Ingredients
    2 c. bean mix*
    2 to 3 qt. water
    1 ham hock
    1 lb. ham, cubed
    1 medium chopped onion
    1/4 tsp. pepper
    1 clove garlic, minced
    1 large can stewed tomatoes, chopped and drained
Preparation
    Cover beans with water. Add ham hock and bring to a boil for 2 minutes. Let soak overnight. Drain beans in the a.m.
    Add 2 quarts of water, pepper, onion and garlic. Bring to a boil. Cover, reduce heat and simmer 1 1/2 hours. Remove ham hock. Clean off bone and return meat to pan. Add extra ham, tomatoes and simmer 1/2 to 1 hour or until beans are tender. Makes 2 quarts.
