Salmon Patties - cooking recipe

Ingredients
    1 c. mashed potatoes with milk and butter
    1 (6 oz.) can salmon, drained, skinned and boned
    1/4 c. chopped onion
    3 saltine crackers, crushed
    1 Tbsp. minced fresh parsley
    1/8 tsp. salt
    1/8 tsp. pepper
    1 egg, separated
    2 Tbsp. vegetable oil
Preparation
    In a medium bowl, combine the potatoes, salmon, onion, cracker crumbs, parsley, salt, pepper and egg yolk; mix well. Beat egg white until stiff peaks form; fold into salmon mixture. Shape into six patties.
    Heat oil in skillet; fry patties over medium heat for 3 to 4 minutes per side or until lightly browned.
