Mediterranean Chicken - cooking recipe
Ingredients

2 Tbsp. margarine or butter
2 cloves garlic, crushed
1 small onion, chopped (about 1/4 c.)
6 boneless, skinless chicken breast halves (about 1 1/2 lb.)
1/2 c. red wine vinegar
2 tsp. chopped fresh or 1/2 tsp. dried thyme leaves
1/2 tsp. salt
1/4 tsp. pepper
2 large tomatoes, chopped (about 2 c.)
1 can (2 1/4 oz.) sliced ripe olives, drained
Preparation

Heat margarine in 10-inch skillet over medium-high heat until melted.
Cook garlic, onion and chicken in margarine until chicken is brown on both sides.
Stir in remaining ingredients; reduce heat.
Cook 10 to 15 minutes or until juice of chicken is no longer pink when centers of thickest pieces are cut.
Yields 6 servings.
