Eggplant Casserole - cooking recipe
Ingredients

1 whole eggplant, peeled and diced
1 small onion, diced
1 lb. bacon
1 can condensed tomato soup
1/2 lb. Cheddar cheese
croutons, buttered
Preparation

Peel, slice and dice eggplant.
Boil until tender, then drain. Place eggplant in 2-quart baking dish that has been sprayed with Pam.
Brown bacon and onions together.
Drain off excess drippings.
Add tomato soup, stirring over medium heat.
Add cheese.
When melted, pour over eggplant.
Add croutons on top. Bake at 350\u00b0 for 15 to 20 minutes until brown.
