1 c. brown sugar
1 stick butter
4 eggs, beaten
3 tsp. soda
3 Tbsp. milk
3 c. flour
1 c. bourbon whiskey
1 tsp. allspice
1 tsp. cinnamon
1 tsp. nutmeg
1 lb. seedless raisins (about 3 c.)
1 1/2 lb. pecans (6 c.)
1 lb. candied pineapple
1/2 lb. candied cherries
1/4 lb. dates

The use of a candy thermometer to measure the temperature accurately and to prevent under or overcooking your candy is strongly recommended.
The boiling temperature indicates the concentration of the solution of your candy.
The higher the concentration, the longer it is cooked and the higher the temperature becomes.
That's why it is so important to use a candy thermometer.
