Herbed New Potato Salad - cooking recipe

Ingredients
    small new potatoes, cooked and sliced (to make 2 1/2 c.)
    1 tsp. sugar
    1 tsp. white vinegar
    1/2 c. onion, finely chopped
    salt and pepper to taste
    3/4 c. mayonnaise
    3 Tbsp. fresh dill, finely chopped
    2 to 3 Tbsp. parsley, chopped
    2 to 3 Tbsp. chives, finely chopped
Preparation
    Cook potatoes in their jackets.
    Peel and slice while warm. Sprinkle immediately with sugar and vinegar.
    Add onion, salt, pepper and mayonnaise.
    Toss gently.
    Fold in herbs.
    Best made in advance and refrigerated.
    Garnish with a bouquet of dill or parsley and sliced, hard-cooked eggs, if desired.
    Yields 4 to 6 servings.
