Pueblo Chicken And Rice - cooking recipe

Ingredients
    4 c. cooked rice
    1 (16 oz.) can tomatoes, chopped and with liquid
    1 small onion, chopped
    2 c. cooked chicken, cut into bite-sized pieces
    salt and pepper
    1 c. sour cream
    1 (7 oz.) can chopped green chillies
    3 c. shredded Jack cheese
    1 small can sliced black olives
Preparation
    In large bowl, combine rice, tomatoes, onion, chillies and olives.
    Spoon 1/2 into 2 1/2-quart dish.
    Spread with chicken, 1/2 of sour cream and 1/2 of cheese.
    Top with remaining rice mixture,
    sour cream and Jack cheese.
    Chill 24 hours.
    Bake uncovered in 350\u00b0 oven for 45 minutes (1 hour if chilled) or until hot throughout.
    Let stand 10 minutes before serving.
