Grandma Vi'S Spanish Yellow Rice - cooking recipe

Ingredients
    1/4 c. vegetable oil
    1 lb. medium shrimp, peeled and deveined
    1 medium green pepper, sliced
    1 medium onion, chopped
    16 oz. can tomato juice
    2 pkg. Spanish saffron (can be found in produce section at Weis Markets)
    2 tsp. sugar
    1 large bay leaf
    salt, pepper and dash of oregano to taste
    1 lb. Uncle Ben's rice
    3 qt. water
Preparation
    In 1/4 cup vegetable oil, simmer shrimp, onion and green pepper for 3 minutes.
    Add tomato juice, saffron, sugar and bay leaf.
    Cover and simmer 5 minutes.
    Add water, salt, pepper and oregano.
    Bring to a boil.
    Add rice.
    Reduce heat, cover and cook for 20 minutes.
    Stir occasionally until rice is cooked.
    Serves 6.
