Orange Tofu(Great For Toddlers) - cooking recipe

Ingredients
    1 lb. firm or extra firm tofu, rinsed, drained and cut into 1/2-inch cubes
    1 tsp. safflower oil or butter
    1 1/2 Tbsp. tamari or soy sauce
    1 orange, freshly juiced
    1/2 tsp. grated ginger root (optional)
Preparation
    Saute tofu cubes in oil or butter for 2 minutes over medium heat.
    Add tamari and ginger and continue cooking over medium heat for 3 to 5 minutes, stirring often.
    Add orange juice and cook for 1 more minute.
    Serve over Texmati brown rice.
