Prize Winner Lemon Pie - cooking recipe

Ingredients
    7 Tbsp. cornstarch
    1 1/2 c. sugar
    1 1/2 c. hot water
    1/2 c. lemon juice
    3 egg yolks
    1/4 tsp. salt
    2 Tbsp. butter
Preparation
    Mix cornstarch, sugar and salt thoroughly in saucepan.
    Add hot water and cook over high heat, stirring constantly, until thick and clear.
    Remove from stove; add beaten egg yolks.
    Return to stove and cook at low heat, stirring constantly for 6 minutes. Take off stove and add lemon juice and butter.
    Cool.
    Pour into cooled baked pastry shell.
    Top with meringue.
