Potato Pancakes - cooking recipe

Ingredients
    3 c. mashed potatoes, chilled (about 4 medium)
    2 eggs, beaten or equivalent of egg substitute
    1/4 c. all-purpose flour
    1 small onion, finely chopped
    1 tsp. salt
    1/4 tsp. pepper
    1/4 tsp. baking soda
Preparation
    Mix all ingredients.
    Drop about 1/4 cup batter for each pancake onto a hot greased griddle.
    Cook about 5 minutes or until brown; turn once to brown other side.
