New Potato Salad - cooking recipe

Ingredients
    4 lb. small red new potatoes
    1/3 c. olive oil
    1/4 c. red wine vinegar
    2 Tbsp. chopped parsley
    1 Tbsp. chives or 1/2 tsp. thyme
    1 1/2 tsp. salt
    2 tsp. mustard
    3 large celery stalks, thinly sliced
    1 1/4 tsp. sugar
    1/8 tsp. pepper
Preparation
    Boil unpeeled potatoes; reduce heat to medium.
    Slice into bite size pieces (unpeeled).
    Mix oil and next 7 ingredients.
    Add potatoes and celery.
    Toss to mix well.
    Cover and refrigerate 1 hour.
    Serves 8.
